One of my specialties
Pork Chile Verde recipe

Easy to cook, takes about two and a half hours. Always a big hit.

2 or 3 lbs pork meat
1 large onion
2 cloves garlic
3 small cans salsa Verde or tomatillo sauce (usually nothing spicy in this stuff)
Or fresh tomatillos in the blender if you like instead of canned. Or some green or red tomatoes would probably work here.  
1 can mild green Chile (optional)
If you like it hot, 1 finely chopped Serrano or other Chile (optional)
1 can refried beans
1 bunch of cilantro (optional) if you like it
½  bottle of beer
Tortillas
Shredded cheese

Chop onion and garlic, brown in large pot.
Rinse, Trim and cube pork put into hot pot with onions and garlic.
Stir turning meat so it browns some, put in your green sauce and peppers and chopped up cilantro stirring mixture so it wont burn. Pour in some beer so the mixture is almost as wet as stew, cover and turn up heat so it boils then back it down to medium heat and let it cook covered for ½ hour to an hour depending on stove and pot size and elevation, stirring it so it doesn’t burn.
Remove lid and cook away some of the liquid so that when you put it in your tortilla it’s not super wet. Sometimes I crank up the heat again for a couple of minutes. Meat should be cooked and getting soft now.
At this stage I usually take a potato masher and squish the meat some so the pieces are smaller and softer, it also mixes the sauce into it. If you over do the mashing it will just be a little gooier but still tastes good.
Empty can of beans into a microwave safe bowl with some cheese on top, cover with saran wrap and microwave for 2 minutes or less.
Warm tortillas spread beans on them put your chile verde on with some cheese on top.
Sorry if some of the details are a little vague, obviously I am not claiming to be a pro at this..
Except for the eating part. It truly is delicious.
Now you can finish that beer....or the next one.
